Vietnamese Lemongrass Grilled Pork Ribs

A Vietnamese lemongrass marinate with aromatic south east Asia seasonings - coconut milk and fish sauce. Don’t hesitate to try this recipe!

Ingredients

• 700 g pork ribs
  
• 2 lemon grass (chopped)
  
• 3 cloves garlic (minced)
  
• 1 teaspoon lime zest & lime juice
  
• 2 tablespoons fish sauce
  
• 2 tablespoons soy sauce
  
• 1 tablespoon brown sugar
  
• 2 tablespoons coconut milk
  
• 1 green onion (finely chopped)
  
• 1 tablespoon lime juice
  
• Coriander leaves (finely chopped)
  
• 2 cloves garlic (minced)
  
• 1 teaspoon chilli powder
  
• 2 tablespoons fish sauce
  
• 1 tablespoon brown sugar
  

Steps

1. To start with, lemongrass aroma can be enhanced by flattening as shown
   
2. Marinate the pork ribs with all ingredients from “pork ribs marinate”. Let marinate overnight or at least 5 hours
   
3. Preheat the oven to 180°C
   
4. Line pork ribs on baking tray and remove any lemongrass stuck on it
   
5. Cover the ribs with a sheet of parchment paper to lock the moist in the ribs and send in oven for 30 minutes
   
6. After 30 minutes, remove the parchment paper and bake for another 10-15 minutes
   
7. For the sauce, mix well all the condiments and add 5 tablespoons of cold water. Serve and enjoy!
