Oxtail Radish Soup

A light yet deeply savoury bowl where rich oxtail broth meets the clean sweetness of white radish, gently perfumed with ginger and green onion, then finished with fresh coriander and chopped spring onion for a bright, comforting lift. This extremely handy oxtail soup is just right when you feel like eating something light but flavourful.

- Soak the oxtail in cold water for at least 4 hours

- In cold water, add oxtail, green onion, ginger and cooking wine for blanching. After boiling, keep blanching for another 5 minutes

- Wash the blanched ox tail in hot water

- After peeling the radish, cut into pieces as shown

- Put all ingredients (including uncut whole onion) into high pressure pot, add boiling water until all ingredients are submerged, I added 2 tablespoons of salt as the base seasoning

- Let cook under high pressure for 30 minutes

- Chop up green onion and coriander for garnish

- Once done, adjust the salt level to your own preference, I added 1 tablespoon of salt

- Lastly, garnish with coriander and green onion, enjoy!
