Winter melon, scallop and lean meat soup

Winter melon soup is really a home-cooked dish. Every household knows how to make this soup. Winter melon can clear away heat and moisturize the body. The soup made from it is sweet and delicious. This soup is the best when my two sons are suffering from heatstroke.

- Peel and core the winter melon, then cut into cubes.

- Marinate the lean meat for fifteen minutes.

- Wash the dried scallops and soak them in hot water for 30 minutes.

- Soak the mushrooms in clean water for 2 hours, or in hot water for 30 minutes.

- Soak the mushrooms until soft and then slice them.

- Bring a pot of water to a boil, add dried scallops and lean meat into the water, and cook for 15 minutes to allow the dried scallops and lean meat to release their flavor.

- After enough time, add ginger slices.

- Add mushrooms and winter melon.

- Cook for another 15 minutes, add a teaspoon of salt, and taste to see if you need to add more seasoning.
