Fluffy Sweet Potato Cheese Bread

- Dough
- To start with, in a mixing bowl, mix the egg and warm milk until well combined

- Then, add in yeast and sugar

- After that, add bread flour and salt and mix well until no more dry flour

- Following by melted butter, and make sure the butter is well absorbed by the dough until it’s smooth

- Cover the dough with cling film and let sit in a warm place until it has doubled in size (around 1-1.5 hours)

- Fillings
- In the meantime, peel the sweet potatoes and cut into small pieces. Let boil for about 20 minutes or until you can poke through them easily

- Drain the sweet potatoes

- Throw in a mixing bowl, add salt and pepper and mash until smooth

- Add in milk to make the filling more liquidy and smoother

- Once done, set aside for later

- Construction
- When the dough is ready, it should looks like this

- Divide into two small dough

- Place one on a rolling surface and sprinkle bit of flour to avoid sticking

- Roll out to a flat big circle that is not too thin (about 0.5cm thick)

- Transfer onto a baking tray (best circular) lined with parchment paper

- Add in the sweet potato fillings and lay flat

- Then top with a layer of mozzarella cheese

- Repeat for the other dough and place on top of the fillings

- Stitch the side tightly

- Cover with a cling film to retain moisture and let sit for another 20 minutes

- After that, apply a layer of milk for a nice roast colour

- Gently apply pressure with fingertips

- Place into a preheated oven at 160°C. Let bake for 30 minutes

- Once done, apply a layer of melted unsalted butter followed by chopped parsley and done!

- Cut into slices and serve!
