Summer Rainbow Rolls

Summer Rainbow Rolls are super refreshing, flavourful Vietnamese rice-paper rolls packed with ox tongue (or your protein of choice), shredded carrot, avocado, egg, and mango—made for that sweet-savoury, creamy-crisp “everything I love in one bite” vibe. They’re served with a smooth peanut-butter dipping sauce loosened with coconut milk/water and balanced with soy sauce, vinegar, and a little sugar. Super refreshing yet flavourful rolls made by Vietnamese rice paper. With a little tweak of ingredients to include all my favourite foods in one bite!

Steps
- Firstly, in a heated pan, slightly sear the ox tongue and season with salt and black pepper. Set aside once cooked

- Layer your whisked egg flat on a pan like this. Slice it once cooked

- Slice the egg like so once cooked

- All the ingredients should be prepared like so for assembly (in this recipe, you can also twist the above ingredients to your preferences. For example, cabbage, cucumber, kimchi etc.)

- Soak the rice paper in water until slightly soft

- And later your ingredients in the middle of the sheet for easier folding

- As for the dipping sauce, firstly mix peanut butter and coconut milk until smooth, then add in soy sauce, sugar and vinegar

- Lastly, cut your roll in half and serve with dipping sauce. Enjoy!
