- Start by cutting the fish slightly on the surface so that it can be marinated better and cooked faster

- Then, rub the fish with all fish marinate ingredients. Leave to marinate for 10 minutes

- Meanwhile, prepare ginger, garlic and green onions, as well as the sauce as shown

- Prepare a heated pan with a decent amount of oil for half frying. Remove green onions and ginger on the fish, and gently transfer into the pan for frying

- Let fry on both sides in low heated until golden brown and set aside

- In another heated pan with oil, start stir frying the fermented chilli oil until aromatic

- Add in ginger and garlic to stir fry together until flavours are well incorporated

- Add in about 200-300 mL of boiling water

- And add in the fish, use a spoon to pour the soup onto the fish continuously

- Cover with a lid and let cook in medium heat for 5 minutes

- Once done, remove the fish to a serving plate and leave the soup in the pan

- Add in green onions and prepared sauce for seasoning and to thicken up the soup

- Lastly, pour the soup over the fish and done! Serve and enjoy!
