- Start by rubbing the dried mushrooms with water

- Let soak for 10 minutes

- After that, rinse it clean and let soak overnight

- Also wash the dried oysters and scallops clean. Reserve

- Once the dried mushrooms are soaked, remove the stalks and keep them

- Cut the mustard greens into big pieces like so

- In a pan, slightly sear the dried oysters and scallops on a pan until slightly browned. Reserve aside

- In the same pan, add in sliced pork belly in medium low heat. This is to excrete the fat and retain the aroma

- After that, add in soaked mushrooms with the stalk, dried oysters, scallops as well as garlic and ginger. Continue to stir fry

- After that, pour in water that was used to soak the mushrooms. Make sure the water level align with all ingredients

- Then, add in all seasonings needed here

- Transfer everything into a clay pot

- Once boiled, close the lid and let simmer for 20 minutes in medium heat

- After that, add the mustard greens into the pot

- Close the lid and cook for another 5 minutes

- Lastly, turn the heat up and let the sauce thicken up without lid

- Once done, serve and enjoy!
