Japchae

Japchae is a popular Korean dish that’s savory and slightly sweet, made with Korean glass noodles stir-fried with vegetables. This version combines carrots, onion, spinach, mushrooms, and sliced dried black fungus, plus egg slices, all tossed in a soy sauce–oyster sauce blend with cooking wine and brown sugar, then finished with sesame oil and sesame seeds.

Steps
- Soak the glass noodles in advance until softens

- Soak black fungus for an hour !!!NEVER SOAK BLACK FUNGUS OVERNIGHT OR TOO LONG!!!

- In a big bowl, pour in boiling water to spinach, leave for 2 minutes and strain it

- Prepare all the vegetables like so

- For the egg, lay flat on pan and roll it up after cooked and cut into slices

- Prepare all the sauces except for sesame oil and sesame seeds in a bowl

- In a heated pan, fry onions and carrots with sesame oil for about 3 minutes/softens

- Then add in black fungus and mushrooms for another 3 minutes/softens

- Add in glass noodles and sauce, turn the heat down to medium low and let simmer for 5 minutes

- As the sauce starts to dry up, add in spinach and egg and mix thoroughly

- Lastly, turn the heat off and add in sesame oil and sesame seeds. Serve and enjoy!
