Bridgeside Boat Banquet

The culture of boat banquets by the bridge was particularly popular during the Southern Song Dynasty. From emperors and generals to literati and poets, everyone liked to have banquets on boats. For example, at the West Lake boat banquet, Song Xiaozong once "drove a large dragon boat to feast his ministers at night". Nanjing boat banquets began with Qinhuai painted boats and flourished in the Ming Dynasty. Zhu Yuanzhang, the first emperor of the Ming Dynasty, ordered the setting off of water lanterns on the Qinhuai River during the Lantern Festival, and officials, gentry, merchants and civilians took lantern boats to watch, which promoted the development of boat banquets.
These boat banquets are often held by the bridge and waterside, and people enjoy food and appreciate the beautiful scenery on the boats. The "boat banquet by the bridge" may be inspired by such boat banquets, integrating elements such as bridges, boats, and banquets to create a poetic and Jiangnan water town-style food scene, which not only reflects the integration of food and natural environment, but also reflects people's pursuit of leisurely and elegant life.
Ingredients
- 250g rice tofu

- 2 eggs

- chili pepper

- Onions

- cilantro and shallots

- pickled pepper

- white vinegar

- Light Soy Sauce

- garlic

- cooking oil

- edible salt

- tomato juice

Steps
- Shape the rice tofu into a non-slip shape and place on a plate for later use.

- Shape the cooked eggs into a boat shape and set aside.

- Cut the chili pepper into sections and the onion into strips for later use.

- Wash the coriander leaves and set aside.

- Dice the garlic, cut the shallot into small pieces, cut the chili into small pieces, chop the chili and set aside.

- Heat oil in a pan, add chopped pepper, green and red pepper segments, and diced garlic, sauté together until fragrant. Then pour in tomato juice and stir-fry for one minute. Add chicken stock, appropriate amount of salt, appropriate amount of white vinegar, mineral water, and then add purified water and bring to a boil.

- Bring to a boil and serve on a plate with shallots.

- Place the eggs on both sides of the rice tofu.

- Place the cilantro in the empty space on the plate, then add the onion guard.

- Chili peppers are used to decorate the stools.

- Sprinkle with chopped green onions and drizzle with the sauce.
