Bone bitter gourd soup for refreshing and heat-removing summer

Bitter melon clears away heat and reduces internal heat, soybeans strengthen the spleen and replenish deficiency, and supplement calcium for bones. Drinking it in the summer can relieve heat and dampness, and it is a classic home-cooked soup made by the old Cantonese.

- Take an appropriate amount of soybeans and soak them in clean water to allow the soybeans to fully absorb water and swell. Generally, soak for 3-4 hours until the soybeans become plump.

- Processing bones: Put the bones into clean water and rinse them repeatedly to wash away the blood and impurities on the surface.

- Add water to the pot, put in the bones, pour in an appropriate amount of cooking wine, add ginger slices and a little peppercorns, turn on the fire and blanch. After the water boils, cook for 3-5 minutes to remove the fishy smell of the bones and blood.

- Preparation: Remove the bones from the blanched water, rinse them again with warm water to remove the foam on the surface, drain the water and set aside for later use.

- Add ginger slices, candied dates, soybeans, and bones into the pressure cooker. Ginger slices can remove the fishy smell and enhance the flavor, while candied dates can balance the bitterness of bitter melon.

- Wash the bitter melon and soak it in clean water for 20 minutes. Cut the bitter melon lengthwise, use a small spoon to scoop out the white pulp and seeds inside, cut it into appropriate pieces and soak it for another 20 minutes.

- Cooking soup: First cook the bones in a pressure cooker (turn to low heat for 3 minutes after steam comes up and turn off the heat), open the lid after natural exhaust, put in the processed bitter melon, cover the pot, wait for the exhaust to start again, keep exhausting for 1 minute, then turn off the heat, wait for the exhaust to start again, open the lid and add salt to taste.
Ordinary pot cooking version, about 1 hour, the key is to stew the bones and soybeans until they are soft, so that the soup is rich enough~
