Try this alternative chicken rice with coconut water that is fast and requires no skills! The sweetness from coconut water and the oil from chicken give this strong flavour to the rice.
Ingredients
2 chicken legs (chopped)
1/2 cup rice
1 slice ginger
2 green onions (chopped)
Coconut water
2 tablespoons soy sauce
1 tablespoon cooking wine
1 tablespoon oyster sauce
1/4 teaspoon salt
1 tablespoon corn starch
Steps
Firstly chop your chicken to small pieces
Marinate the chicken with soy sauce, cooking wine, oyster sauce, ginger, salt and corn starch. Mix well and let marinate for 30 minutss
After washing the rice, add coconut water SLIGHTLY LESS THAN how you would normally cook your rice in a cooker
Place the marinated chicken on top of the rice. Let cook in rice cooker
Once done, sprinkle chopped green onions and mix well. Enjoy!
