A chipotle inspired recipe where two of my favourite components - guacamole and taco beef are moved onto an open toast!
Ingredients
2 slices sourdough
30 g minced beef
5 g Bell peppers (chopped)
1/2 Avocado
10 g Red onion (chopped) (3/4 for frying together with the beef, remaining 1/4 for guacamole)
1 coriander (chopped)
1 teaspoon Lemon juice
1 g cumin
1 g paprika
Pinch of salt
Pinch of black peoper
1 tablespoon Greek yoghurt (optional)
Steps
In a heated pan, fry the chopped onion until soft
Add in minced beef and continue to stir fry until brown
Add in bell peppers and stir fry with salt, black pepper, paprika and cumin
Set aside while preparing for the guacamole
In a bowl, mash the avocado with red onion, coriander, lemon juice and black pepper until smooth. Add in an extra tablespoon of Greek yogurt for creamier texture (optional)
Lastly assemble the guacamole on toast, followed by the taco beef and enjoy!
