Ground Pot Fish(地鍋魚)

Ground Pot Fish is a comforting pot of sea bass layered with assorted mushrooms and tofu, finished in a fragrant base of garlic, ginger, diced tomato, star anise, and spicy bean paste. Hua tiao wine, soy sauce, oyster sauce, and dark soy sauce bring a deep, savory aroma, while green onions, white pepper, and salt keep the flavors clean and balanced. A cozy, shareable dish that’s rich, warming, and full of umami.

Steps
- Firstly, chop the fish into 2 fingertip thick as shown

- Rub the fish with ginger, green onions and salt thoroughly. This step is to remove the fishy taste and act as a base marinate

- Let sit to marinate for about 10 minutes. Remove green onions and ginger afterwards. Set the fish aside for later

- Prepare the mushrooms and tofu as shown

- In a clean pot, place the assorted mushrooms as a base

- Followed by the fish and tofu

- In another pit, pan fry garlic, ginger, tomato, star anises and spicy bean paste until aromatic

- Then add hua tiao wine, and followed by about 100mL boiling water

- Pour the soup base into the pot with the fish

- Season the fish pot with sauce needed

- Let cook with lid for about 15 minutes in medium heat

- Once done, you can garnish with desired toppings

- Lastly, serve and enjoy!
