Thai Grilled Chicken(泰式烤雞)


A fragrant Thai-style chicken dish built around an aromatic marinade of coriander roots, garlic, lemon leaves, shallots, lemongrass, Thai ginger, and a touch of red chili. Turmeric adds a warm golden note, balanced with brown sugar and fish sauce for that classic sweet-salty depth, then finished with a brush of melted butter for extra shine.

Steps
- Firstly, cut the chicken flat so it is easier for grilling

- After that, prepare the marinate sauce by blending all ingredients together

- Marinate the chicken by rubbing the sauce to the chicken for 5 minutes

- Leave in the fridge for marinate for at least 2 hours

- Preheat the oven to 200°C for 20 minutes

- After marinating, transfer onto a baking tray with parchment paper. You can also wrap the drumsticks and wings tips with aluminium foil to avoid burning

- Let bake for 45 minutes at 200°C

- Then, take out from oven and brush a layer of melted butter onto the chicken for extra shine

- Continue to bake for another 15 minutes at 210°C

- After that, scrap off the spices on the chicken and it is ready to serve
