Shrimp and Egg Curry Fried Rice


Today my kid made a curry fried rice. If you like fried rice, don't miss this one. Curry and overnight cold rice are essential, and other ingredients can be corn kernels, green beans, etc. This brand of curry is always available in my home. It is convenient and delicious to cook curry chicken, ribs, curry shrimp, etc.
Ingredients
- 25g curry cube

- 10 shrimps

- A little onion diced

- A little carrot diced

- 2 eggs

- Cooking wine (1 tablespoon)

- White pepper (About 1 gram)

- A little shredded ginger

- 1 tablespoon soy sauce

- Overnight cold rice (2 bowls)

- 2 tablespoons cooking oil

Steps
- Shell the shrimp, cut open the shrimp back and remove the shrimp thread, add shredded ginger, cooking wine, white pepper powder, light soy sauce and cooking wine and marinate for about 10 minutes.

- Beat the eggs and set aside.

- Chop onion and carrot

- Add a little water to the cold rice and stir-fry. Remove the shredded ginger from the shrimp and use kitchen paper to absorb the marinade. Prepare all the ingredients.

- Heat the pan over medium-low heat, add 2 tablespoons of oil, then pour in the egg liquid. After frying, put it away and set aside.

- Spray some oil into the pan, pour in the shrimps, stir-fry for a while and set aside.

- Continue to spray oil into the pan and pour in onion and carrot pieces until cooked.

- Add the curry cubes and heat over low heat until loose, soft and melted.

- Pour in the rice and stir fry evenly. Then add the previously fried eggs and shrimps and continue to stir fry over medium-low heat. The curry itself contains salt. If you feel it is not salty enough, you can add a small spoonful of salt according to your taste and stir fry evenly. Then serve.
