- Boil water and add (1 tablespoon of salt, 1 teaspoon of baking soda, 3 tablespoons of oil) add papaya leaves, which I have washed clean, boil until soft (±15 minutes) don't forget to turn them over.

- Wash the boiled papaya leaves thoroughly under running water until the water from washing them is clear, set aside.

- Roughly chop the papaya leaves, set aside.

- Thinly slice the garlic, shallots and red chilies.

- Fry the anchovies briefly, then remove and set aside. Saute the garlic and shallots until fragrant. Add the sliced chilies and galangal, stir well.

- Add boiled papaya leaves and anchovies, add salt, chicken stock, brown sugar, water (100 ml). Stir well, adjust the taste. Cook until absorbed.

- Correct the taste of cooking until the spices are absorbed

- Ready to be served
