Salt Baked Prawns

Salt Baked Prawns is all about clean sweetness from prawns wrapped in a bold, fragrant salt crust. Coarse salt is perfumed with bay leaves, star anise, dried ginger, Sichuan pepper, dried chillies (to your preferred heat), and a touch of onion, then finished with a splash of hua tiao wine for a warm, unmistakably aromatic lift.

- In a clean clay pot (don’t use non stick pan), slightly sear the salt in low heat

- Then add in all condiments except for hua tiao wine to the salt

- Stir fry on low heat until aromatic. Reserve 1/3 aside

- In the same clay pot, add in the prawns and arrange them nicely

- Then add in remaining of the salt mix, covering majority of the prawns

- Cover with a lid, and add hua tiao wine along the lid. Let bake for 8 minutes in low heat

- Once done, remove the spices and garnish with green onions

- Serve and enjoy!
