Chicken Thighs with Scallions and Mushrooms

Stir-fried chicken drumsticks with mushrooms is a flavorful and simple home-style stir-fry. Tender chicken drumsticks are cut into small pieces and quickly stir-fried in hot oil until golden brown and fragrant. - Chop the scallions, shred the ginger, and mince the garlic.

- Remove the roots from the button mushrooms and cut them into 4 pieces.

- Debone the chicken thighs and cut the chicken into pieces. Marinate the chicken with a little pepper, 1.5g salt, a little sugar, 1 teaspoon cornstarch, 1 teaspoon cooking wine, 1 teaspoon light soy sauce, and half a teaspoon oyster sauce. Mix well and add 1 teaspoon oil to lock in the flavor. Marinate for 15 minutes.

- Prepare a separate sauce: one teaspoon of light soy sauce, a little oyster sauce, and one teaspoon of cooking wine.

- Heat oil in a wok, add chicken and stir-fry over high heat until golden brown on both sides.

- Leave some oil in the pan, sauté ginger and garlic until fragrant, then add mushrooms and stir-fry until golden brown.

- Add the chicken and scallions, then add the sauce and stir-fry until the sauce thickens. Remove from heat and serve.

- Remove from heat and plate; done.
