Reduced-Fat Roasted Vegetables and Shrimp (Babe Squash, Broccoli)

- Processing of baby pumpkin: Scrub the surface of baby pumpkin carefully with salt to remove dirt, then soak it in clean water for 5 minutes, remove it and cut into strips for later use.

- Cut the broccoli into small florets, add appropriate amount of salt and corn starch, soak in clean water for more than 20 minutes, then rinse thoroughly with clean water, drain and set aside.

- To prepare the prawns: Freeze the prawns for 20 minutes to make shelling easier. Remove from the freezer, remove the shells and devein, rinse, and drain.

- Prepare garlic: Flatten garlic and finely chop, set aside.

- Marinate the ingredients: Put the cut pumpkin strips, broccoli florets and prawns in a bowl, add a little five-spice powder, 1 tablespoon of light soy sauce, 1 tablespoon of oyster sauce, appropriate amount of black pepper, 1 teaspoon of salt, 2 tablespoons of olive oil and minced garlic, mix well, and marinate for 10 minutes.

- Baking pumpkin: Preheat the oven to 180 degrees. After preheating for 5 minutes, place the marinated pumpkin strips evenly on the baking tray and bake in the oven for 10 minutes.

- Roast the vegetables and shrimp: Remove from the oven, flip the pumpkin strips, add the broccoli and shrimp, and return to the oven for another 10 minutes. Once done, remove from the oven and serve, sprinkle with chopped parsley. I ate the pumpkin skin with it; it was delicious.
