Gochujang Pancetta Udon

Gochujang Pancetta Udon is a Korean-style spicy stir-fried udon where pancetta is rendered until glossy, then cooked with golden garlic and softened button mushrooms. The noodles are tossed through a bold gochujang-and-chilli sauce (with soy sauces, sesame oil, sugar, and black pepper) and simmered briefly to soak up the flavour, finished with sesame seeds for a nutty crunch.

- Pan fry the pancetta without oil until it starts to secrete oil

- Add in minced garlic and fry until golden brown

- Add in sliced button mushrooms, fry until softened

- In a bowl, mix in gochujang, Korean chilli powder, soy sauce, dark sauce, sugar, sesame oil and black pepper

- Add in udon and the sauce, together with about 15 mL of water

- Let simmer with medium heat until udon is cooked and softened

- Thicken up the sauce with high heat and serve

- Lastly garnish with sesame seeds and enjoy!
