Thai Style Prawn Salad(泰式涼拌大蝦)

Ingredients
500 g
prawns
1/2
red onion (sliced)

limes (sliced)
15 g
Thai ginger
2
coriander roots
5
lemon leaves
6
small green chillies
1
red chilli
2
cloves garlic
2
shallots
2 tablespoons
fish sauce
1 tablespoon
soy sauce
1 teaspoon
sugar
1 tablespoon
rice wine
Steps
Start by blanching the prawns
In a pot of boiling water, add in rice wine and let the prawns cook for 3 minutes
Once done, transfer into a pot of cold water
If possible, also add in some ice cubes to retain the prawn texture
Prepare all the ingredients under “seasonings” as shown
Blend everything in a blender with soy sauce, fish sauce and sugar
On a serving plate, add in pealed prawns and sliced lime
Followed by sliced red onions
And lastly, mix with the prepared seasoning sauce
Once done, serve and enjoy!
