Shakshouka
This is an easy and healthy dish that is popular in North Africa and the Mide East
Ingredients
200 g
canned chopped tomatoes
1/2
Bell peppers (chopped)
3
eggs
1/4
Onion (chopped finely)
2
cloves garlic (minced)
1/4
teaspoon salt
1/4
teaspoon black pepper
1/4
teaspoon cumin powder
1/4
teaspoon smoked paprika
Grated parmesan cheese
Steps
Heat up a pan with olive oil, fry onion and garlic until softened
Add chopped bell peppers and fry until softened
Pour in canned tomatoes, add about 20mL of water and mix well
Add the four spices into the pan
Let simmer in low heat for about 5 minutes
Make small wells in the pan and crack in the eggs
Close lid and let simmer until eggs are cooked
Garnish with dried parsley (optional) and parmesan cheese. Served with bread. Enjoy!
