- Firstly, debone your chicken like so

- In a bowl, marinate the chicken with soy sauce, cooking wine, fish sauce, salt and pepper for 15 minutes

- Prepare the small red chillies, coriander and minced garlic in a bowl like so, and squeeze in lime juice

- Add in soy sauce, fish sauce, rattan pepper oil and water as indicated

- In a heated pan, fry the marinated chicken until crispy and golden brown

- Slice the chicken into strips and plate

- Finally, serve with the prepared sauce for dipping. Enjoy!
