Traditional Javanese Apem Cake from Indonesia

In Javanese culture, kue apem holds symbolic meaning as a sign of seeking forgiveness and expressing gratitude, and is often served in traditional ceremonies such as slametan, nyadran, and ruwahan. It is also an important part of the Kirab Apem Sewu tradition in Surakarta, where thousands of apem cakes are distributed as a symbol of unity and a prayer for blessings.

- Crack the coconut and take the fruit then peel the skin, here I use 1/2 coconut, my friend.

- Then grate the coconut

- Add 400 ml of warm water to a container containing grated coconut to make coconut milk.

- Then knead and squeeze the water to make coconut milk

- Next, we puree the cassava tape to which we have added sugar and salt.

- Stir the tape

- Add rice flour to the tape mixture.

- Then add the coconut milk little by little and stir until there are no lumps.

- Break the eggs and beat them.

- Add the eggs to the mixture and stir until evenly mixed.

- Cover the dough and let it rest for 30 minutes. If the yeast is good, it might take less time to rise. The yeast I use takes 30 minutes to rise.

- Prepare the apem mold and heat it for 15 minutes before baking.

- After 30 minutes, add the vanilla flavoring and stir again until evenly mixed. If you don't like it, you can skip the vanilla flavoring, friends.

- Put the dough into a container and then pour it into the apem mold.

- Cover and cook for 15 minutes, 15 minutes for one bake, my friends, here it took me 30 minutes because I baked it twice.

- After 15 minutes

- The apem cake is ready to be served
