White Peach Salad

White Peach Salad is a sweet-savory plate of seared white peach layered with prosciutto, finished with roasted cashews and a balsamic drizzle, all set over a silky peach-and-vinegar dressing emulsified with olive oil and honey.

Steps
- Firstly in a blender, add peach, salt, white wine vinegar, honey and blend until a puree form

- Keep the blender on, and slowly add in the olive oil

- Blend for about 30 seconds to 1 minute until it is emulsified

- You should get a consistency like so. Leave it in the fridge for the time being

- Now, cut the other peach into this shape and let sear on pan in medium heat

- You should see the peach turning brown, repeat until both sides are seared

- It is normal to see your peach seared like so. It is a caramelisation of the peach

- And also briefly roast the cashew nuts for a while just to make it crispier

- Then in a oval plate, base the plate with a thick layer of peach sauce

- Then you can put the prosciutto randomly on the plate

- And stack the seared peach onto prosciutto to look more aesthetic

- Lastly, garnish with cashew nuts and balsamic vinegar drizzled and done! Serve and enjoy!
