Stir-fried pork ribs with bitter melon

Stir-fried pork ribs with bitter melon is a dish of pork ribs that are cut and marinated with tapioca flour, oyster sauce, soy sauce, salt, sugar, and aromatic spices (garlic & ginger), then stir-fried until tender. After that, it is mixed with soaked bitter melon and cooked with salt, sugar, and chicken stock until absorbed, resulting in a distinctive combination of savory, sweet, and slightly bitter flavors.

- Cut the bitter melon, soak it in water with salt, then wash the bitter melon using salt, squeeze it, wash it again, throw away the water, then lift it and drain it.

- Wash the pork ribs, cut the pork ribs into several pieces, then marinate with 1 tsp tapioca flour, 1/2 tsp cooking oil, 1/2 tsp oyster sauce, 1/2 tsp soy sauce and 1/4 tsp granulated sugar, stir well then let stand for 15 minutes. set aside

- Prepare a frying pan, add 2 tablespoons of oil, then add the spices, saute until fragrant, then add the pork ribs, saute with water, then cook for ±10 minutes / until soft over low heat, then cover.

- The pork ribs are cooked, then remove and set aside.

- Saute the spices until fragrant, then add the bitter melon, add 1/4 tsp salt, 1/2 tsp sugar, 1/2 tsp Royco chicken stock. Then cover, when it is a little soft, add the pork ribs.

- Add the pork ribs, stir well, remove and serve.

- Stir-fried pork ribs with bitter melon are ready to be served.
