Immerse the bones in cold water for at least 2 hours to remove excess blood
Blanch the bones in cold water with ginger, green onions and cooking wine for 15 minutes after boiling
After that, wash them with hot water and put in high pressure pot for cooking
Add in all the spices and sauces, together with 2 cans of beer. Add additional boiling water to submerge all ingredients. Let cook in high pressure pot for 20 minutes or 1.5 hours for normal pot
