Ingredients
Steps
- Cut the meat into slices about the thickness of two coins, add a little salt and pepper, mix well, and marinate for a few minutes to let it absorb some flavor.

- Add two tablespoons of potato starch to a bowl and mix with water in a 1:1 ratio. Stir with chopsticks until dissolved, let it settle for a few minutes, then pour off the water. Crack an egg into the bowl, add a pinch of salt, and stir until thickened.

- Then pour it into the sliced meat, add a little cooking oil and stir well. This is the key to crispiness.

- Chop some scallions, cilantro, and carrots to add color.

- Heat oil in a wok until it reaches 60% of its maximum temperature. Add the meat slices separately to prevent them from sticking together.

- After frying until set, remove from the oil. If you can't finish frying all the ingredients in one batch, fry in two batches.

- Heat the oil to a higher temperature, pour the mixture together and fry again until golden brown and crispy, then remove.

- In a separate pot, pour in the sweet and sour sauce and simmer over low heat until it bubbles. Then add the fried meat slices and quickly stir-fry until the meat slices are coated with the sauce. Remove from heat and serve.

- Sprinkle with side dishes, remove from heat and serve. The sweet, sour, and crispy texture is so fragrant and delicious!
