Stir-fried beef noodles

You can make delicious stir-fried beef noodles at home with a perfect wok hei (wok aroma): the rice noodles are dry and the beef is tender. Onions, bean sprouts, chives and scallions are stir-fried together, creating a wonderfully fragrant dish. Simply season with soy sauce, oyster sauce, pepper and other seasonings. The dish is almost oil-free, yet still incredibly fragrant and full of smoky flavor.

- Wash the beef, remove the tendons and membranes, and slice it into thin slices about the thickness of a coin. Marinate the sliced beef briefly with 5 ml of warm water, 2 g of pepper, 1 teaspoon of cornstarch, a little sugar, 1 teaspoon of light soy sauce, 1/2 teaspoon of oyster sauce, 1/2 teaspoon of cooking oil, and a little salt. Marinate for 3 to 4 minutes.

- Separate the rice noodles that are stuck together and set aside.

- Wash bean sprouts, remove roots, and drain. Cut chives and scallions into long sections, slice onion. Prepare the sauce: one tablespoon of light soy sauce, half a tablespoon of oyster sauce, a pinch of salt, one gram of pepper, and a pinch of sugar.

- Heat oil in a wok until it smokes, then add the beef slices and stir-fry quickly over high heat until they are about 60% cooked. Remove from the wok and set aside.

- In the same pot of oil, stir-fry the onions and bean sprouts quickly over high heat for one minute, then remove them from the heat. Do not overcook them until they are too soft.

- Heat oil in a wok, add the rice noodles, and stir-fry gently over medium heat for a few seconds until softened. Fry for about seven or eight seconds, then flip them over and gently pull them apart with chopsticks.

- Then add the beef slices, bean sprouts, onions, chives, and chopped green onions, and stir-fry briefly with chopsticks.

- Pour in the prepared sauce and stir well with chopsticks.

- Stir-fry over high heat for a few moments, then turn off the heat and serve.
