Coconut Milk Chewy Squares


The delicate white cubes coated in fine coconut flakes look refreshing and exquisite. I prefer the version made with white agar powder; gelatin makes it sticky, while white agar powder has a chewy, bouncy texture that's delightfully bouncy. This one doesn't contain cream; the sweetness comes purely from milk and coconut milk, with a rich coconut flavor that's not cloying, and the sweetness is just right—completely guilt-free.
A cup of jasmine tea brewed at a 1:50 tea-to-water ratio is perfect. Steep in 80-85°C water for 3-5 minutes. The fresh jasmine aroma and the sweetness of the coconut milk blend perfectly. A bite of the cube followed by a sip of tea instantly balances the sweetness, leaving you feeling incredibly refreshed. Enjoy a cup of this tea with the coconut milk cubes as an afternoon snack, or have one after a meal to cleanse your palate. Whether enjoyed alone or shared with family, it brings a sense of pure bliss.

- In a small bowl, combine 18g of agar-agar powder and 50g of water, stirring until smooth and free of lumps. Set aside. (If you skip this step, it will clump, so don't be lazy!)

- Take a mold (lunchbox or food storage container will do), line it with plastic wrap, and it will save you about ten minutes of unmolding time later. You'll know how effective it is once you try it.

- Place a small saucepan on a heat, add 30g of white sugar, then pour in 200ml of milk and 100ml of coconut milk. For a richer flavor, reduce the milk to 150ml and add 50g of heavy cream. Cook over low heat until it just starts to bubble; do not boil it, otherwise the texture will not be smooth and tender.

- Pour in the previously prepared jelly water, continue stirring until it just begins to boil, then immediately turn off the heat!

- Let it cool until it's not too hot to handle before pouring it into the mold. The jelly sets very quickly; if it's completely cooled, it will clump together and be ruined.

- After unmolding, cut into small cubes, roll in shredded coconut, coating each side with coconut flakes. This little dessert is incredibly fragrant!
