Mango Coconut Milk Sticky Rice

This mango coconut milk sticky rice recipe features plump, white glutinous rice drizzled with coconut milk, glistening with golden mango chunks. Mango slices are then shaped into a small flower, and a few green leaves are added. Arranged on a plate, it's a dessert shop favorite!
It's even more delicious. The glutinous rice is soft and bouncy, coated in the fragrance of coconut, while the mango is sweet and juicy. With one bite, the aroma of coconut and fruit fills your mouth with a refreshing sweetness!
The recipe is super simple: soak the glutinous rice and steam it. Bring the coconut milk, sugar, and salt to a boil, and pour it over the rice. Chop the mango and arrange it on top. Even a novice can pull it off easily. Try it now; I'm already dizzy with the aroma!
Ingredients
Steps
- Soak the glutinous rice in cold water for about 24 hours. If it's hot, soak it in the refrigerator to prevent it from spoiling.

- Steaming glutinous rice
Line a steamer basket with cheesecloth, rinse the soaked glutinous rice, and place it in the basket. To allow the rice to breathe and cook evenly, poke small holes in it with your fingers. Once the water boils, place the steamer basket in the steamer and steam for 30 minutes.
You can also cook in a rice cooker, but I personally don't like the texture.

- While steaming the glutinous rice, take a small saucepan and pour 130g of coconut milk, 2g of salt, and 10g of sugar. Bring to a simmer, then turn off the heat and set aside.

- Preparing the glutinous rice:
After the glutinous rice is steamed, place it in a container and pour two-thirds of the coconut milk into it. Stir well to allow the rice to absorb the coconut milk. Let it sit for 10-20 minutes.

- To make the mango flowers:
While the sticky rice is absorbing the coconut milk, prepare the mangoes. Peel the mango skin and slice it thinly to make the mango flowers. First, roll up the smallest mango slice to form the center of the flower. Then, wrap the remaining mango slices around the center, forming a small flower. This will create a more beautiful finished product.

- Assembling the dish
Chop the remaining mango into small pieces. Place the coconut milk-soaked sticky rice in a serving bowl, then invert it onto the plate with the mango blossoms. Add the diced mango and pour the remaining third of the coconut milk over it. This mango coconut milk sticky rice dish is ready and ready to enjoy.

- I often make this delicacy, and it makes me feel even more emotional when I look through the old pictures.
