Homestyle Ginger & Scallion Sauce

The amount of ginger paste in this recipe is three times the usual amount, because my whole family loves ginger paste. Generally, ginger paste is served with boiled chicken, but everyone in my family mainly eats ginger paste with rice, and the amount of rice is two to three times larger than usual 😳

- Soak the green onions in water for fifteen minutes, then rinse and chop into chopped green onions. Since the chopped green onions are not cooked in the wok but only heated in oil, the knife and chopping board used to cut green onions are best used for cutting cooked meat.

- Cut the ginger into ginger grains.

- Heat oil in a hot wok and sauté ginger rice. In general practice, ginger rice is not stir-fried, but children are afraid of spicy food, so I will stir-fry it to remove the spicy taste.

- Add 1/2 teaspoon salt and set aside.

- After the ginger rice has cooled, add it to the chopped green onions, then add two teaspoons of salt, three tablespoons of soy sauce and one tablespoon of dark soy sauce.

- Heat 60g oil in a wok.

- After the oil boils, turn off the heat and pour the hot oil into the chopped green onion and ginger.

- Stir well.

- Finish!
