Sweet Lychee Chicken Soup

~~ Remove the pits and take out the meat of the lychees, put them into the pot with fresh chicken and pitted red dates, and add Ophiopogon japonicus and Polygonatum odoratum to neutralize the warm nature. - Wash the chicken, put it in a pot with cold water, add 1 spoon of cooking wine, ginger slices, peppercorns (or scallions), boil it, skim off the foam, remove it and wash it with warm water.

- Wash Ophiopogon japonicus and Polygonatum odoratum, soak in water for more than half an hour and set aside.

- Prepare 20 lychees, peel and core 10 lychees.

- Remove the pits from the red dates and set aside.

- Put the processed chicken, soaked Ophiopogon japonicus, 10 lychees (peeled and pitted), pitted red dates, and ginger slices into the pot and stew together.

- When using a pressure cooker to cook, turn off the heat 8 minutes after the exhaust begins. After the exhaust is completed and the lid is opened, peel and core the remaining 10 lychees, add them to the pot, continue to cook with the lid open for 10 minutes, and add salt to taste.

- For example, cook the chicken and other ingredients together on low heat for 40 minutes, then add the lychees and cook for another 10-15 minutes.
