Stir-Fried Abalone with Chili(辣椒炒鮑魚)

Ingredients
- 8 abalone

- 4 green chillies

- 3 small red chillies (adjust according to your own spice level)

- 10 g ginger (diced)

- 10 g garlic (diced)

- Salt

- 1 tablespoon soy sauce

- 1 tablespoon oyster sauce

- 1 tablespoon rose wine

- White pepper

Steps
- Start by cleaning the abalone by using a brush to clean its edges (request the fishmonger to remove the meat from its shell)

- Then, slightly score the abalones on the back as shown

- In a pan WITHOUT oil, add in green chillies and also a bit of salt which helps the chillies to softens

- Stir fry in medium heat until they’re softened and a bit seared

- Likewise, repeat for the small red chillies too

- Once done, reserve on a plate

- In another pan, add in garlic and ginger, stir fry until aromatic

- After that, add in the abalone

- And add in rose wine, oyster sauce, soy sauce and white pepper

- Close the lid and let simmer in medium heat for 6 minutes

- Once the abalones are cooked thoroughly, they should look like this

- Then, throw in the chillies and stir fry together with the abalone

- Once done, it’s ready to serve! Enjoy!
