Spicy Braised Pork Trotters(香辣豬蹄)

Ingredients
- 3 pork trotters

- 2 shallots (diced)

- 4 cloves garlic (diced)

- 3 slices ginger (diced)

- 3 thin green chillies

- 1 red chilli

- 8 g ginger

- 4 bay leaves

- 2 cinnamon barks

- 2 star anises

- 1 Cao Guo (草果)

- 1 dried red chilli

- 2 tablespoons soy sauce

- 1 tablespoon dark soy sauce

- 1 tablespoon oyster sauce

- Salt

- 2 tablespoons corn starch

- 40 g water

-
- Ginger

- Green onion

- Rice wine

Steps
- When buying pork trotters from the butcher, request to chop into smaller pieces and burn off hairs on the trotters

- Blanch to clean the pork trotters. Blanch in cold water with needed ingredients. When water starts boiling, let blanch for 3 minutes

- Once that done, wash immediately in cold water to cool down

- Drain and reserve

- In a high pressure pot, add all needed spices and water that half immerse the pork trotters

- Let cook in high heat and when it comes to a boil, turn down to medium heat and let braise for 12 minutes

- Meanwhile, prepare the vegetables as shown

- Once the pork trotters are done braising, remove from the spices onto a plate

- In a heated pan with oil, add in garlic, ginger and shallots, stir fry until aromatic

- After that, add in red and green chillies and continue to stir together until soften

- Then, add in braised pork trotters and stir fry together until they are evenly coated with the vegetables

- Then add in seasonings needed and stir fry

- Once that done, add in corn starch water to thicken up the sauce

- Lastly, stir fry until the sauce is well coated onto the pork trotters. Serve and enjoy!
