Osmanthus Fermented Rice Cake with Homemade Osmanthus Honey(桂花酒釀米糕)

- 210 g rice flour

- 40 g plain flour

- 3 g instant yeast

- 25 g sugar

- 70 g fermented rice wine

- 180 g cold water

- 100 g osmanthus

- 300 g rock sugar

- 50 mL lemon juice

- 600 g water

Steps
- Rice cake
- Start by adding all wet ingredients to the dry and mix with a whisk

- Make sure you get a smooth consistency as shown

- Cover it well and leave in a warm place to ferment for 1.5 hours

- Osmanthus honey
- While the rice cake batter is fermenting, you can prepare the Osmanthus honey. Wash the Osmanthus gently so you don’t destroy its shape

- Bring the 600 g of water to a boil, and turn the heat off. Then add in the washed Osmanthus. Let sit in the pot for 10 minutes

- After that, filter out the Osmanthus, and pour back the Osmanthus water into the pot. Reserve the Osmanthus for later

- Then, add in rock sugar, turn the heat back to medium heat and let the rock sugar melts slowly. REMEMBER DO NOT MIX OR STIR the pot while the rock sugar is melting. Let it melts gradually

- Once the rock sugars are all melted and start bubbling, add in lemon juice. Let cook in medium heat for 20 minutes

- After 20 minutes, add the Osmanthus earlier back into the pot. Let this honey syrup cool down completely

- Meanwhile, sterilise glass containers for Osmanthus honey with boiling water

- Once Osmanthus honey is cooled down, store in containers and leave in fridge

- Steaming rice cake
- Once the rice cake batter is done fermenting, it should doubled in size and very bubbly

- Use a whisk to remove big bubbles so that the finished product of the rice cake is smoother

- Then, you also want to remove small bubbles as shown

- And you should have a smooth batter

- Brush the steaming container with a layer of oil to avoid sticking

- Pour the batter in, and remove any small air bubbles

- Cover with cling film, poke a few holes and let steam over boiling water for about 25 minutes

- To determine whether the rice cake is fully cooked, you can use a chopstick to poke into the rice cake. If nothing sticks onto it, then it is ready to go

- Finally, cut the rice cakes into chucks and drizzle with homemade Osmanthus honey. Serve and enjoy while hot!
