Golden Sand Tofu with Shrimp.

Golden salted egg yolks coat tender white tofu, each piece of tofu soaking up the salty aroma of the egg yolks, resulting in a smooth and delicate texture. Fresh, bouncy shrimp nestle among the tofu, their bouncy texture creating a wonderful contrast with the soft tofu. Garnished with vibrant green scallions, the dish is savory with a hint of sweetness. Every bite is a perfect blend of freshness and aroma, making it both delicious with rice and satisfying.

- Add two teaspoons of cornstarch to one tablespoon of water.

- Boil three salted egg yolks in cold water for 15 minutes, then remove and peel.

- Chop the steamed salted egg yolks with a knife.

- Try to chop the salted egg yolks as finely as possible, so that the cooked salted egg yolk sauce will be smoother.

- Peel and clean the shrimp. Marinate with one teaspoon of cornstarch, one teaspoon of cooking wine, a little salt, and a little white pepper for a while. Do not marinate for too long. Basically, once you have prepared the other ingredients, you can start cooking.

- Cut the tofu into small cubes.

- Dice the lettuce.

- Heat an appropriate amount of oil in a pan, add the shrimp and stir-fry until cooked, then remove and set aside.

- Add the chopped salted egg yolks to the same pot of oil and stir-fry constantly over low heat until the pot is full of foam. When it reaches this stage, add a bowl of boiling water (approximately 200 ml).

- Next, add the tofu and diced lettuce, half a teaspoon of salt, half a teaspoon of sugar, one teaspoon of cooking wine, and a pinch of pepper. Cover and simmer over high heat for 2-3 minutes. After uncovering, taste and if you are satisfied with the flavor, add the stir-fried shrimp and cornstarch slurry. Gently stir the ingredients in the pan constantly with a spatula. When the sauce thickens and all the ingredients are coated with the sauce, it's ready to serve.

- A dish of salted egg yolk tofu and shrimp is ready.
