Stir-fried beef with winter bamboo shoots

Tender slices of beef, coated in a rich, savory sauce, are stir-fried with crisp bamboo shoots over high heat, creating a wonderful flavor combination. The sweetness of the bamboo shoots balances the richness of the beef, while shredded red peppers add a touch of spiciness. Ingredients
- 3 Approximately 400 grams of small winter bamboo shoots

- 200g beef

- Two garlic sprouts and one red bell pepper

- ginger (15 grams each of garlic)

- 10 ml soy sauce

- 10g oyster sauce

- 10 grams each of Sichuan peppercorn powder and black pepper powder

- 15g corn starch

- 1 tablespoon of cooking oil

- 1 teaspoon of salt

Steps
- Slice the beef thinly, add cornstarch, Sichuan peppercorn powder, white pepper powder, and half a teaspoon of cooking oil, mix well and marinate for 5 minutes.

- Peel and thinly slice winter bamboo shoots.

- Bring water to a boil in a pot, add sliced winter bamboo shoots and a little salt, blanch for three minutes, then rinse with clean water and drain.

- Slice the chili peppers into strips, chop the scallions, and mince the ginger and garlic.

- Heat oil in a wok to 90 degrees Celsius, add the marinated beef and stir-fry until it is 60% cooked.

- Remove from heat and set aside.

- Leave some oil in the pan, add ginger, garlic, and chili strips, stir-fry briefly, then add the prepared ingredients and stir-fry until fragrant. Add a little salt.

- Pour in the beef and stir-fry over high heat for a few moments, then sprinkle with chopped green onions.
