Boiled meat

Ingredients
- 200g pork belly

- 10g scallions

- 10g coriander

- 10g ginger

- 10g garlic seeds

- 1 teaspoon of Sichuan peppercorns

- 1 teaspoon of pepper

- salt to taste

- 1 spoon of chicken bouillon

- 1 teaspoon of white vinegar

- 1 tablespoon of oyster sauce

- 1 tablespoon of soy sauce

- 15g onion

- 50g cooking oil

- 15g chili powder

Steps
- Wash the pork belly and make small holes in the skin.

- Pour a spoonful of soy sauce.

- Put soy sauce on the perforated pork belly skin.

- add water to the pot and place the steaming rack

- Steam the marinated pork belly in a pot for 25 minutes.

- Dice 10 grams of ginger, 10 grams of garlic, 10 grams of shallot, 10 grams of coriander, 10 grams of chili pepper and 15 grams of onion.

- Add a teaspoon of pepper, a teaspoon of Sichuan peppercorns, a teaspoon of chicken essence, a spoonful of oyster sauce, 1/2 teaspoon of salt, a teaspoon of white vinegar, and a teaspoon of light soy sauce.

- Pour into a bowl and mix well.

- Place chili powder in a bowl.

- When the pork belly is done steaming, open the lid.

- Remove the pork belly.

- Pour any remaining pork belly juices into the chili bowl.

- Cut the pork belly into small pieces and place on a plate.

- Heat oil in a pan to 120 degrees.

- Pour the oil into the dipping sauce.

- Mix the dip and serve.

- Garnish with a sprig of coriander and serve.
