- Clean the chicken after buying it and chop it into large pieces.

- Add some salt, soak in cold water for 5 minutes, then rinse with hot water and drain.

- Slice the ginger.

- Heat oil in a wok and fry the chicken inside the cavity first.

- Add a few slices of ginger to the chicken and stir-fry quickly over high heat. Stir-fry the chicken before stewing it to make it more fragrant and delicious.

- Stir-fry the chicken until it changes color and turns yellow.

- Then add boiling water to the pot. Make sure to add enough water at once; do not add water during the cooking process, as this will affect the texture of the chicken. Then cover the pot and cook for about 10 minutes.

- After 10 minutes, open the lid, add a few soaked shiitake mushrooms and four or five red dates, then transfer to a clay pot and simmer over low heat for about 30 minutes.
