Coconut milk curry with potatoes and pork ribs

Coconut milk curry potato spareribs, a feast for the taste buds! The spareribs are tender and boneless, and the potatoes are full of soup, soft and sweet. The curry and coconut milk blend together, the aroma is overflowing, the salty fragrance is accompanied by the sweetness of coconut milk, the thick sauce covers the ingredients, and a bowl of white rice is served, which instantly opens the tongue carnival.
Ingredients
- Ribs (500g)

- Potatoes (400g)

- Curry (100 grams. This brand of curry tastes good to me and is also suitable for kitchen novices, without complicated cooking skills)

- Coconut milk (200g)

- Ginger (8 pieces, 4 pieces of blanched ribs, 4 pieces of boiled ribs)

- Cooking wine (1 tablespoon)

- Sichuan peppercorn (5-10 pieces, you can use green onions instead)

Steps
- Dice the potatoes and set aside.

- Slice the ginger and set aside.

- Cut the ribs into large pieces so they are more delicious. Wash and drain.

- Pour cold water into the pot, put in the ribs, add 1 tablespoon of cooking wine, 4 slices of ginger and 5-10 peppercorns (optional), cook for 5 minutes after the water boils, remove and wash for later use.

- Add oil to the pan, stir-fry the spareribs until fragrant, then add the ginger slices and stir-fry until fragrant, then set aside.

- Spray oil in a pan, add potatoes and fry until golden brown.

- Prepare another pot, add boiling water to cover the ribs (note: if you add cold water, the ribs will be dry), you can add more water. After cooking, take out some of the soup and add some salt to season, you can get a bowl of delicious rib soup (I won’t tell you, I also filter out the rib soup and oil to cook broccoli ^_^), so as to make the best use of it without wasting. I use the energy-saving version, pressure cooker, exhaust for 4 minutes, turn off the heat and cool naturally, open the lid and add the fried potatoes, exhaust for 2 minutes and turn off the heat.
If you use a pot to cook ribs, it is recommended to stew for 30-40 minutes first to let the ribs fully cooked and flavored.

- Pour out some of the pork ribs soup and add potatoes.
Since potatoes are easier to cook, wait until the pork ribs are 80% cooked, then add the diced potatoes and continue cooking for 10-15 minutes until the potatoes are soft. This ensures that the pork ribs are cooked thoroughly and prevents the potatoes from being overcooked.

- Add the curry cubes and cook over low heat until melted. Stir carefully to avoid burning the bottom.

- After the curry melts, pour in the fragrant and silky coconut milk, stir gently and evenly, continue to keep the heat low, let the aroma of curry and coconut milk fully blend, until the soup in the pot bubbles and exudes a mouth-watering complex aroma, then turn off the heat.
