Summer three-shredded stir-fry

- Blanching: Boil water in a pot, add a little salt and a few drops of cooking oil, first put in the dried tofu shreds and blanch for 1-2 minutes, remove and rinse with cold water, drain the water, this can remove the bean smell and make the taste softer; then put the bitter gourd shreds in boiling water and blanch for about 30 seconds, quickly remove and rinse with cold water to maintain its emerald green color and crisp taste.
Ingredients
- 200 gram Dried tofu

- 200 gram bitter melon

- 100 gram Tomatoes

- 100 gram cooked soybeans

- 10 grams each of ginger, garlic, millet pepper, 1 spoon of oyster sauce, 1 spoon of white vinegar, 1 spoon of light soy sauce, 1 teaspoon of chicken essence, some salt, 1 teaspoon of pepper powder.

- 100g cooking oil

Steps
- Put 10 grams each of ginger, garlic, chili pepper, 1 tablespoon of oyster sauce, 1 tablespoon of white vinegar, 1 tablespoon of light soy sauce, 1 teaspoon of chicken essence, some salt, and 1 teaspoon of Sichuan pepper powder into a bowl and mix well. Heat oil in a pan and pour into a bowl to mix the sauce for later use.

- 200g dried tofu cut into shreds.

- 200g bitter melon cut into shreds.

- Wash the pot and boil water, add one spoon of oil and one spoon of salt, blanch the bitter gourd shreds and dried tofu for one minute.

- Put the blanched bitter melon and tofu into a plate and add cooked soybeans.

- Slice the tomatoes and arrange them in a circle on a plate.

- Pour the prepared sauce into the tofu dish and mix well.

- Place the mixed tofu and bitter gourd shreds in the middle of the tomatoes.

- A summer cold dish is ready.
