Fry hairy melon with dried shrimp

Ingredients
Hairy melon 600g
Dried shrimp 20g
Chinese celery 70g
Oil 50ml
Salt 3/4 teaspoon
Oyster sauce 2 tablespoons
Garlic 3 cloves
Ginger 20g
2 Shallots
Water 200ml
Steps
Melons peeled & cut into pieces
Wash and soak dried shrimps in water for 20 minutes. After soaking, drain and save the water
Chop ginger, shallot & garlic
Cut celery into 2-3cm long
Pour 50 ml oil to the wok & fry the garlic, shallot & ginger until fragrant
Add drained shrimp & continue to fry for a minute
Add in the melon & continue to fry for another minute
Add 200ml water & water from soaking the shrimp & cooked for 8-10 minutes
Add in celery & fry for 30 seconds
Add 3/4 teaspoon salt & 1 tablespoon oyster sauce & thoroughly mixed and serve
