Wine and food go hand in hand! Sautéed clam meat with dried radish and peanuts

After tasting this dish of fried clam meat at the "Lettuce Club", I was deeply attracted by its unique flavor. The tender clam meat is wrapped with salty and fragrant dried radish, the green and red peppers add spiciness, and the crispy peanuts are the finishing touch. The flavors are layered and it goes well with rice or wine. I went home and tried it repeatedly to adjust the delicious taste I remember. It is even better when rolled with lettuce, which is refreshing and rich.
Ingredients
- 500g of clam meat

- 200g dried radish

- 3 slices of ginger

- 2 - 3 cloves of garlic

- 15g onion

- 100g salted fried peanuts

- 1 tablespoon soy sauce

- 1 tablespoon oyster sauce

- 1 spoon of white vinegar for washing clams

- a little chili

Steps
- Processing dried radish: Soak the dried radish in water to soften it, cut it into small cubes, squeeze out the water, and put it in a bowl for later use.

- Rinse the clams with clean water, add a spoonful of white vinegar and soak for 5-10 minutes to remove the sand and fishy smell, then rinse and squeeze dry, and place on a plate for later use.

- Prepare the ingredients: chop onion, flatten and chop garlic, slice ginger, and dice green and red peppers for later use.

- Stir-fry the base: Pour oil into a pan, add sliced ginger, chopped onion and garlic over low heat, and fry until the onion is transparent and the garlic is slightly golden.

- Turn to high heat and stir-fry the clams. When the water is dry, add 1 spoon of cooking wine along the edge of the pot to remove the fishy smell.

- Add cooking wine to enhance the aroma: After the water is dried up, add 1 spoon of cooking wine along the edge of the pot to enhance the aroma and remove the fishy smell.

- Add the radish and stir-fry over medium heat for approx. 3 - 5 min. to allow the flavors to blend.

- Pour 1 tablespoon of soy sauce and 1 tablespoon of oyster sauce, stir-fry to coat with the sauce, and fry until the water is dry.

- Add chili peppers to enhance flavor: Add green and red chili peppers and stir-fry over high heat until cooked but still crispy.

- Add fried peanuts and stir-fry quickly and evenly to blend the crispiness of the peanuts with the flavor of the clam meat and dried radish. Turn off the heat after stir-frying a few times and serve the fried clam meat on a plate. A delicious fried clam meat is ready.
