Korean Kimchi Pancake


This Korean kimchi pancake is such a divine dish that even a complete beginner can learn it with their eyes closed! Just for its simplicity and authentic flavor, you absolutely have to learn it! Its spiciness is very mild, a refreshing and mild heat that won't overpower you. The tangy aroma of the kimchi and the caramelized flavor of the batter blend perfectly, resulting in a crispy exterior and soft interior, bursting with the fresh, fermented flavor in every bite. It tastes exactly like what you'd have in Korea, so you don't need to go to a Korean restaurant; you can recreate it at home in 10 minutes.

- Prepare ice water: Prepare 60-65 grams of ice water in advance, and add more later if needed.

- Chopping Kimchi: Chop the Korean kimchi into small pieces and put it in a bowl.

- Adding flour: Pour in potato starch and all-purpose flour, and mix with chopsticks first.

- Batter preparation: Pour in the prepared ice water and stir into a smooth batter. If it's too thick, add a little water; if it's too thin, add a little flour. Adjust the consistency until it flows smoothly when scooped up. (DO NOT add eggs!)

- Pan-frying the pancakes: Heat plenty of oil in a pan, pour in a spoonful of batter, and gently spread it into a round pancake with a spatula. Fry until one side is set and the edges are golden brown, then flip it over and fry the other side until both sides are crispy and golden brown.

- Ready to eat! The freshly fried kimchi pancakes sizzled hot, golden and crispy, with a soft and tender interior. Holding up my phone to take a picture, the tangy aroma was so tempting, I couldn't resist grabbing a piece. My fingertips trembled from the heat, and when I put it in my mouth, it was so hot I was panting (it was really hot 😂).
