Guizhou speciality red sour soup (貴州紅酸湯)
60 g
Guizhou mountain pepper (貴州木姜子)
30 g
bamboo shoot
20 g
oyster mushrooms

block of tofu
20 g
ginger

cloves garlic
10 g
Sichuan pepper
1 tablespoon
soy sauce
1 tablespoon
oyster sauce
1 tablespoon
rice wine
1
egg white
White pepper
Salt

Green onion

corn starch
Steps
Start by washing the fish slices. Rub with corn starch with water and let sit for 10 minutes
After that, rinse with running water to remove fishy taste. Drain afterwards
Then, marinate the fish slices with listed ingredients. Make sure to rub the green onion and ginger water well to the fish. Set aside for later
Meanwhile, clean and cut the side ingredients. Remove the small tomatoes stalk
After that, add the tomatoes into a heated pan, add some salt and let cook with lid until softens
Then, use a spatula to mash the tomatoes into purées
Reserve in a bowl
Clean the pot and pan fry the Guizhou mountain pepper and Sichuan pepper until aromatic
Add in garlic and ginger and stir fry together
After that pour in prepared tomatoes purées and Guizhou speciality red sour soup
Once the broth comes to a boil, add in all vegetables and tofu
After that, gently add in the fish slices and let them cook thoroughly
Once done, it’s ready to serve! Enjoy!
