Thai-style Chicken Feet

Appetizer, sweet and sour
Ingredients
- Boneless chicken feet 600g
- 2 stalks of lemongrass
- 4 slices of ginger
- 2 teaspoons of salt
- 1 tablespoon of cooking wine
- Small red eggplants (as needed)
- Half a purple onion
- Celery 1 ticket
- Akane Kan 1 card
- 6 cloves of minced garlic
- 3 bird's eye chilies
- 4 limes
- 2 tablespoons of fish sauce
- 1 tablespoon Thai sweet chili sauce
- 4 teaspoons of white sugar
- 2 tablespoons white vinegar
Steps
- First, put the thawed boneless chicken feet, lemongrass, ginger slices, salt and cooking wine into a large pot of cold water and bring to a boil. Blanch for 3 to 4 minutes.

- Remove the chicken feet from the water and place them in ice to cool, then drain and set aside.

- Mix minced garlic, chopped chili, lime juice, fish sauce, Thai sweet chili sauce, white vinegar, and white sugar to make a sweet and sour sauce.

- Mix the chicken feet with the hot and sour sauce and marinate in the refrigerator for at least 30 minutes (overnight is even better).

- Just before serving, cut cherry tomatoes into wedges, purple onions into strips, and celery into sections. Mix these ingredients with the marinated chicken feet in the spicy and sour sauce, then plate them. Garnish with cilantro.
