800 Ml Water ( another 200 ml for dissolving water chestnut flour)
Steps
Water chestnut peeled and pounded.
Beat the egg. Set aside.
Mix water chestnut flour with 200 ml water. Set aside.
Zest of half lemon.
Boil sugar and 800 ml water until sugar dissolves.
Add pounded water chestnuts into the boiling sugar water. Boil for 5 minutes.
Mix the water chestnut flour mixture thoroughly before slowly added to the boiling water chestnut mixture. Stirring continuously while adding. This makes the soup thicker.
Add the beaten egg and zest of half lemon. The zest makes the soup fragrant and refreshing.
Done. It can be served now. It is better to serve chilled.
