Ingredients
White bitter melon 450g
Dried small shrimps 10g
Garlic 3 cloves
2 pieces Shallot
Ginger 20g
Oil 40ml
Salt 3/4 teaspoon for seasoning & 1 teaspoon for extracting water from bitter melon
1 Spring onion for garnish
Steps
Add 1 teaspoon salt to the sliced bitter melon, mixed & stand for 5 minutes to extract bitterness of the melon
Squeezed water from the salted melon
Wash the shrimps and drain
Chop ginger, garlic & shallot together
Pour oil in the wok & fry ginger, garlic, and shallot until fragrance
Add in melon & shrimp & continue to fry for 5 minutes
Done and sprinkled with spring onion
