Baked Pumpkin with Salted Egg Yolk

The pumpkin strips are covered with salted egg yolk, which is oily and golden. The pumpkin tastes soft and sweet, and the salted egg yolk is very salty and fragrant. The crunchy texture spreads in the mouth, and the salty fragrance goes straight into the nose. It looks good and tastes good, and it is simple and flavorful. It is a hot dish in home cooking!
Ingredients
- 350g pumpkin

- 2 salted egg yolks

- about 30 grams of corn starch

- 1 tsp salt

Steps
- Prepare the pumpkin: Peel and clean the fresh pumpkin, then cut it into strips about 8cm long and 3cm wide. Set aside.

- Blanch pumpkin strips in boiling water for 1 minute, drain and set aside.

- Steam the salted egg yolks until cooked, remove them and crush them into small pieces. Set aside.

- Add a small amount of salt to the pumpkin strips, mix well to season, then coat evenly with potato starch and set aside.

- To fry the pumpkin: Place the pumpkin strips coated with starch in a non-stick pan and fry over low heat for about 1.5 minutes. Be careful not to stir frequently to keep the pumpkin in shape. Remove from heat once done.
Note: Pay close attention to the time for both blanching and frying, otherwise the pumpkin will not hold its shape!

- In another pan, add a little oil and crushed salted egg yolks. Stir-fry over low heat until foamy. Add fried pumpkin strips and stir-fry gently until evenly mixed. Remove from heat and serve.
